Job Description:
We seek a seasoned Lead Baker to join our Pier Sixty-Six Resort
team. This role is integral to creating unique culinary experiences
for guests. Key responsibilities include:
- Developing and maintaining positive relationships with the
pastry team.
- Maintaining knowledge of departmental policies and
standards.
- Preparing and baking breads, viennoiseries, and pastries,
adhering to recipes and quality standards.
- Ensuring proper baking, portioning, and presentation of
pastries.
- Safely using baking tools and equipment, and maintaining food
safety and hygiene procedures.
- Maintaining equipment knowledge and use.
- Anticipating guests' needs and resolving complaints.
- Maintaining cleanliness and organization of work areas.
- Tracking inventory and ordering ingredients.
- Ensuring consistent production levels and minimizing
waste.
- Maintaining State sanitation and Hotel requirements.
- Collaborating with Chef and Sous Chef to review assignments and
performance.Additional responsibilities include:
- Setting up workstations and inspecting tools and
equipment.
- Preparing and producing bread menu items and centerpieces for
Banquets and buffets.
- Maintaining proper storage procedures and minimizing
waste.
- Informing the Pastry Chef of excess items used in daily
specials.
- Disinfecting and sanitizing worktables and cutting boards.
- Directing and assisting Stewards in clean-up.
- Completing closing duties, including returning food items to
storage, rotating returned product, and cleaning food prep
areas.
